Belgian Waffles

2 ¼ cups all-purpose flour
1 teaspoon baking powder
2 tablespoons sugar
½ teaspoon salt
1 teaspoon cinnamon
2 eggs separating the yolk from the whites
½ tablespoon vegetable oil
2 cups of milk
1 teaspoon vanilla

Preheat waffle pan, spray with nonstick spray to cook and set aside.
In a large bowl, mix the flour, baking powder, sugar, salt and cinnamon.
In a medium bowl, beat the egg whites with a hand mixer until they are stiff. Set aside.
In a separate medium bowl, mix the egg yolks, vegetable oil, milk and vanilla extract.
Add the egg yolk mixture to the dry ingredients and mix well.
Add the egg whites.
Pour the dough onto the hot waffle pan and cook according to the manufacturer’s instructions.
Serve immediately with butter, syrup, powdered sugar or any other favorite ingredient.
